Raspberry and cream Cupcakes


After my careful searches I finally found a cup cake recipe different and like I wanted. I had chance to share this recipe with you. United states is the first thing come in mind when it is about cupcake. It is said that there is a cup cake shop in every street with many gorgeous cup cakes in the US. You can even see cup cakes in movies or TV series such as in sex and the city Carrie ate pink frosting covered and strawberry at the top cup cake. It is impossible to resist the desire for cup cake during that scene :) There is cup cake madness in the world and lets join this madness together ;)



I think the taste of the cake and freshness of the raspberry make the cup cake better because this was it is not too sweet. You can try this recipe with other fruits than raspberry also...



Ingredients:

For the cupcakes;
180g butter, softened
180g caster sugar
180g plain flour
1 heaped tsp baking powder
3-4 tbsp milk
2 free-range eggs
150g raspberries

For the icing;
125g butter, softened
250g icing sugar
1 tbsp milk
small drop red food coloring
12 raspberries

Preparation method:

1. Preheat the oven to 180C/350F/Gas 4. Line a 12-hole muffin tin with paper cases.
2. Place all of the cupcake ingredients, except the raspberries, into a food processor and mix until well combined. Add more milk, if necessary, to get the mixture to a soft drop consistency.
3. Put one spoonful of the mixture into the cases, then follow with 2-3 raspberries, and another spoonful of mixture.
4. Bake for 15-20 minutes, or until risen and golden-brown. Remove from the oven and set aside to cool for 10 minutes.
5. Meanwhile, for the icing, beat the butter in a bowl until light and fluffy. Carefully stir in the icing sugar and continue to beat for five minutes. Beat in the milk and food colouring.
6. Decorate the cupcakes with the icing and top each cupcake with a raspberry.

Chocolote Balls

  My day started very happy today. For a long time the weather in Stockholm was gray and snowy and it was really effecting people's psychology a lot.. But this week when I woke up to go work and seeing the sunny mornings  made me very happy. Hearing the birds tweets, feeling the warm of sun behind while walking really rests my soul and I hope Stockholm will be sunny always. I guess spring is coming day by day.

  After a 3 day break I returned with my new recipes :) It is a recipe I love since my childhood. Easy to make, very tasty to eat. If you have the ingredients at home you can make it very quickly and it is very delicious. I am sure that chocolate lovers will love this also :)


Ingredients for Chocolate Balls:

200 gr plain biscuits
200 gr chocolate
20-25 gr hazelnut dust
whipped cream
2 tsp milk

Preparation:

Pulverize the biscuits and then mix them with hazelnut dust.
Melt the chocolate with milk bainmarie style.
Add mixture with biscuits, melted chocolate and whipped cream together, and then prepare small balls from it. Cover the the balls with coconut.

Cheesy Rose Borek



  Today I will introduce you the Cheesy Rose Borek  which I cooked this week and just had time to prepare my blog :) I decided to cook the Cheesy Rose Borek because my husband started to talk about it everyday. As a family we love every kind of borek. Today I will tell you how I make this lovely and delicious borek. 

First of all ingredients: 
5 filo pastry
curd
parsley

For the sauce:


1 Glass oil

1 Glass yoghurt
1/2 Glass milk
2 eggs


  For the inner part of the borek, first we mix parsley and curd in a pot. Stir up the sauce ingredients in another pot. Put the filo pastries over and over and cut them into 4 even pieces (to achieve big triangles) Pour sauce on the triangle surface and then put the cheesy inner part we prepared before to the circular side of the triangle and then roll them.  Pour the sauce to top of the roll also and then bend the rolls from one edge and make a rose shape. After preparing all the rose rolls, put them onto the oily oven tray. Cover the top of rose borek's with egg yolk and sprinkle susame or black cumin. After cooking them here is your rose boreks are ready.

Cookies


After long searches finally I found the cookie recipe and decided to make it after collecting the ingredients. Whenever the topic is cookie, it reminds me the cookie monster. We used to watch it all the time when we were child. I liked the cookie monster most in sesame street which is very sweet and eating cookie all the time. I believe it made most of us like cookies and still while I am watching it I desire cookie :)



If anybody haven't watched the cookie monster, I suggest you to watch it and I am sure that you will want to make these sweet and lovely cookies afterwards. You can also do your own taste test as cookie monster :)



Ingredients:

  • 200g self raising flour
  • 100g caster sugar
  • 100g butter, plus extra for greasing
  • 1 large free-range egg, lightly beaten
  • 1 tsp vanilla extract


    First pre-heat your oven at 180 degree Celsius.

    Mix the flour and sugar together in a bowl, then rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

    Add the egg and vanilla essence and mix to form a soft dough.

    Roll out onto a well-floured work surface and cut into rounds. Place on greased baking sheets and bake for 10-12 minutes, or until golden brown.

    If you wish you can server your cookies plain or by decorating with sugar paste. I decorated my cookies with sugar paste preparing lovely figures. You can also shape your cookies according to your imagination.

Fruit Basket


Today I have the relaxation and laziness of Sunday :))

I thought on what could refresh me and remove the laziness on me and decided to prepare a fruit basket :) Fruits are basic foods that we all need to consume. They are miracle foods that at least eating one in a day refreshing you and your skin. As we all know the benefits of fruits can not be counted and every fruit has its own taste. I can't say one fruit is better than the other because I love them all very much :) and I can't think of a life without them.

The good part of the fruit basket is it may provide opportunity to the people who doesn't like fruits by shaping or covering them with chocolates. If you wish you can give these fruit baskets as a gift to your friend's in their special days. Nowadays fruit baskets are almost taking the place of flowers because they have beautiful view and delicious taste. It can make people really very happy. You can present a different thing to your loved ones. They will remember and thank you one more time while eating the fruit basket...

As a strawberry lover I used to eat strawberries with powder sugar or icing cream but now I am eating them covering with chocolate. This way it is much more delicious. Frozen chocolate on the strawberry making it nice looking and more attractive but you need to be careful against the charm of these stuff, because we don't want to deal with putting on weight ;)



The fruits I used in the preparation of fruit basket are; 2 green apple, 2 banana, pineapple,  French grape and 10 strawberry. In order to decorate the fruits and change their taste in a better way I used bitter and milky chocolate. Then as if I am preparing a flower bouquet I arranged the fruits.

Cake pops


Today I will mention about the something that is loved by many people and started a new trend in the US and that is Cake Pops. Preparing cake pops are as fun as eating them and while eating them they will take you to your childhood :)

You can prepare the cake pops as you wish. You can shape them or decorate their top, it is up to you. From what I learned and my imagination these are came up.



Tonight my friend has a house warming party and I am planning to give these to him as a gift. I hope these will make him happy.
You can prepare cake pops as a gift for your friends' birthdays, special events or your children and I am sure they will be happy with such a gift.

I used cacao flavored cake. By using the frosting inside the cake pieces, it turned to dough so that it can be shaped. After shaping the cake pops you can decorate them as you wished.

While I was preparing the cake pops I listened the Rihanna's song which is very successful and sensitive especially it's clip is very plain. If you wish you could also listen this song while you are preparing your cake pops and maybe it will inspire you to create beautiful cake pops :)

Mole Cake




Today I am writing my first post and I am very excited :)

I made something today that I was planning to do for a long time and I missed a lot which is Mole cake. The ingredients I used while making my Mole cake are: cacao flavored cake, banana,chocolate drops and white cream.

Making the mole cake is very easy and joyful nevertheless its taste is very delicious and I hope you will like it. The cake pieces on top of Mole cake is giving a wonderful pleasure and I am sure that you will love the taste of cream and cake combination :) Lets all together discover the magical world of sweets ;)
